Edamame & Black Bean Salad with Basil, Feta, and Apple Cider Dressing

Wow! This is a beautiful and tasty dish that is sure to knock your socks off and keep you full for hours!!

 

 

1 Cup Grape Tomatoes (halved)

1 Cup Edamame (unshelled)

1 15oz Can of Black Beans (BPA-Free washed and drained)

¼ Cup Fresh Parsley (flat leaf – stems removed – coarsely chopped)

1 Anaheim Chile Pepper (seeded and diced – medium hot pepper)

2 OZ Fresh Feta Cheese (3 – ¼ inch slivers chopped up into ¼ inch squares)

1 Medium Red Onion (Finely Chopped)

Dressing:

1 ½ T Olive Oil

2 Cloves Garlic Minced

2 T Lime Juice (fresh – about ½ lime)

2 T Apple Cider Vinegar

1/8 Tsp Sea Salt

¼ Tsp Ground Pepper

½ TBS Basil Paste (available at Meijers)

OR ¼ Cup Basil  (Fresh & finely Chopped)

Directions:

Combine the Tomatoes, Edamame, Black Beans, Parsley, Pepper, Onion, & Feta in a Medium Bowl.

In a small bowl whisk together all the Dressing Ingredients

Add dressing to salad and mix well

Chill or serve immediately.
