This is a great low-fat, low calorie, natural sugar recipe that is sure to go big!  Great for making a tasty but healthy recipe for guests!   Perfect with pork tenderloin!

2 Apples

½ C. Simply Apple Juice (or other pure apple juice)

½ C. Blueberries

4 Medium Strawberries Chopped

¼ C Walnuts

¼ C Oats – Old Fashioned

*optional- low fat & sugar granola (for cobbler topping)

Instructions:

Preheat oven to 375

 Prepare Sauce – Take Apple Juice, Blueberries, and Strawberries and place in a small saucepan.  Cook on Medium Low and reduce the mixture until it becomes thick like a syrup.  Stir every couple of minutes.

Cut and Core Apples – While Sauce is reducing, cut apples in half lengthwise (stem up) and scoop out core to make a small hole in the middle of apple halves.

Place apples in a small baking dish.

*If preparing apples in advance squeeze the juice from ¼ lemon on top to keep apples from browning.

 Prepare Walnut Topping – in a sandwich back combine oats and walnuts.   Crush oats and walnuts with a rolling pin or other solid object by pounding until desired consistency.  I leave some chunks of walnuts for texture.

With a spoon scoop 1 TBS of  walnut topping onto each apple

Drizzle apples with berry topping filling the hole with compote.

*Store compote in fridge for smoothies or use as a jelly on wheat toast or crackers.

 BAKE – Bake covered at 375 for 20 minutes (middle rack) – then broil for 5 minutes or until desired crunch for topping.  (sometimes topping does not harden – adding a little honey to the walnut mixture and adding extra before broiling will help for a crunchy toping)

**If you have your favorite low fat, sugar, granola this works well for this recipe as well.
