Personal Training Brighton Breakfast Cereal

This recipe is from a very interesting book I finished yesterday “Wheat Belly”.  This is a great breakfast alternative (or any meal, I had it for lunch yesterday) to the traditional “Heart Healthy” but high blood sugar insulin producing OATS.  Try it out.  I made a few adjustments to the recipe per my liking.

This is a surprisingly filling meal.  If you use Coconut Milk it is even more filling.

 

 

1⁄2 cup coconut milk, whole dairy milk, full-fat soymilk, or unsweetened almond milk (add a little more water if you like a little softer cereal)

1⁄2 cup ground flaxseeds (can be purchased pre-ground)

1⁄4 cup unsweetened coconut flakes

1⁄4 cup chopped walnuts, walnut halves, or raw hulled sunflower seeds

Ground cinnamon

1 tsp vanilla (pure vanilla extract)

1⁄4 cup sliced strawberries, blueberries, or other berries (optional)

2 tsp Stevia in the Raw

Combine the milk, ground flaxseeds,coconut flakes, vanilla, and walnuts or sunflower seeds,  in a microwaveable bowl and microwave for 1 minute. Serve topped with a sprinkle of cinnamon, Stevia, and a few berries if desired.  Enjoy.
