Pesto Egg Frittata with Prosciutto

Pesto Egg Frittata with Prosciutto EverFit Personal Training in Brighton

Ingredients:

Oil – Olive, 1 tablespoon
Meijer Organics – Unsalted Butter, 0.5 Tbsp
Onions – Raw, 1 medium (2-1/2″ dia)
Kale, 1.25 cups
Garlic – Raw, 2 clove
Green Bell Pepper Gladys, 0.5 c
Parma – Prosciutto Di Parma, 2 slice (27g) – 1/3 pack
Reggano – Parmesan & Romano Grated Cheese, 4 Tbsp
Buitoni – Pesto With Basil All Natural, 0.0625 cup (62g)
Spice Supreme – Crushed Red Pepper, 1/8 tsp
Egg-Cage Free Extra Large Brown-Raw, 3 egg
Organic Free Range Egg – White Only, 2 egg white

 

Preheat oven to 375 degrees

  1. Place olive oil and butter in iron skillet or oven safe skillet – heat at medium as this keeps olive oil and butter from overheating
  2. Add onions sautéing until start to soften

  3. Add Green pepper and kale (chopped and vein removed) to skillet sautéing until onions start to golden and kale wilts slightlyIMG_1524IMG_1526
  4. Add Sliced Garlic to skillet mixing until fragrant about 1 minute
  5. Add Prosciutto (fat removed and chopped)IMG_1528
  6. Whisk eggs and egg whites with 2TBS Cold Water
  7. Add eggs to skillet moving ingredients around to get egg mixture to set under other ingredients
  8. As egg begins to set add pesto to middle of skillet and swirl into mixture using a fork – distribute as evenly as desired (2-3 minutes)IMG_1529
  9. Add pepper and red pepper powder or crushed red pepper to taste
  10.  Place in oven and bake 10 minutes or until middle of mixture is set
  11.  At 10 minutes remove from oven and add shredded parmesan cheese or other artisan aged white cheese
  12.  Move oven rack to 2 inches above broiler and broil top for 2 minutes or until some golden color appears on top of frittata.
  13. Let set for about 5-8 minutes before servingIMG_1533
  14. Serve with Gluten Free or Sprouted Bread like Udis Millet and flax or Ezekiel bread & Clementine’s, grapefruit, berries or other seasonal fruitIMG_1536
