Protein Packed Blueberry Pancakes

I just made these this morning and what a great recipe for adding protein and fiber to your traditional pancake.  If you would like a fiber and healthy fat boost 1-2 tsp’s of flax seed and perhaps reduce the ricotta cheese to a part-skim.

You can do this with other berries, apple butter, and have fun adding a few raw pecans, walnuts, or cashews.

Create this with your favorite gluten free pancake mix as well for a gluten free option and make sure to add in some ground flax for added fiber.

4 Pancakes will give you approximately

  • 22g Protein
  • 6.4g Fiber
  • 4.2g Sugar
  • 400 Calories
  • 11.2g fat
